Whilst house-sitting over half term, The Mothership chopped up our ripe bananas and put them in the freezer. She read about it in one of my many recipe books.
When she told me she what she had done, she reminded me that she used to make ice-cream like that when we were children. We were living in Belgium at the time and I’m sure that there’s a story about accidentally buying buttermilk instead of milk because of the language barrier, which is how she ended up making the ice-cream.
I haven’t eaten a bowl of ice-cream for a while. That volume of dairy has an unpleasant effect. But I miss it. So I thought I’d have a go at making the ice-cream with something that is Dairy-Free. And the result was marvellous. It’s great if you have issues with Dairy, and if you are a banana-eating Paleo fan.
To make Dairy Free Paleo Ice Cream, all you need is bananas, coconut cream and a blender.
- 4 bananas
- 250ml Coconut Cream
- Peel and chop your bananas into chunks.
- Put in a freezer bag and freeze overnight.
- At the same time, put a carton of coconut cream in the fridge.
- When you are ready to eat your ice-cream, put both ingredients in the blender and whizz to a fine paste.
- You may need to lubricate things with a Tablespoonful of water as the coconut cream is very thick.I found that if I let the bananas "rest" at room temp for about five minutes, this helped with the blending process.
- The ice-cream will be quite soft so either serve immediately, or put in a plastic lidded container and return to the freezer for half an hour.
- Makes three generous portions or four sensible ones.

I have been meaning to try the frozen banana ice cream thing for a while – I have previously mashed up banana & peanut butter & then frozen into lollies but not the other way around – I’m going to try it when I get around to making some homemade nut butter….I was put off buying that coconut cream due to the 2 E numbers in it but the Pataks cream seems to be additive free – but it’s in a block :-/

I suspect you may need the banana as a base @Karin, like a smoothie, but it’s an untested theory. I look forward to finding out your findings out 🙂
