Bread made in a mug, microwave French Toast

A few days ago I wrote a post on The Motherhood about meals that you can make in a mug. Which is how I found myself baking bread in a mug in the microwave the other night.

The reason for this is that in a moment of serendipity I had been sent a box of Orgran Buckwheat Pancake Mix for a review. Frankly, after eating pancakes for seven days straight, I was tired of them. And I live a car’s drive from any shops, so when I run out of bread, it’s a big deal to buy more.

But this Pancake Mix may be the answer to my prayers: always in the cupboard when you need it. There are added benefits too:  it is Gluten Free- I can serve it to my GF friends- and Buckwheat is the best known source of biological protein in the plant kingdom, so can help lower your risk of high cholesterol and blood pressure. Double Win.

Orgran Buckwheat Pancake Mix Review and Recipe

Triple win if you think that this took me under three minutes from breaking the egg to buttering the bread. I followed the Bread made in a Mug  recipe on G Free Foodie website- although I mixed my semi-skimmed milk with a 1/2 tsp of lemon juice rather than the stated vinegar to create buttermilk. 

I would also make this is a Pyrex jug rather than a mug because although the mug produced nice muffin-sized tranches of bread, it also produced considerable mess when the mixture overboiled in the cup in my microwave. I nuked mine for 90 seconds (I have a button to press that cooks in 30 second increments) at 850W.

Not only that but the next day I used the leftover bread to make a very easy French Toast in a mug:

French Toast in a Mug
Prep time:  1 min
Cook time:  2 mins
Total time:  3 mins
Serves: 1
 
Ingredients
  • Two English Muffin/mug-sized slices of bread
  • butter for greasing
  • 1 egg
  • 2 Tbsp milk
  • 1 tsp sugar
  • Vanilla Essence
  • Nutmeg
Instructions
  1. Just tear up the bread into chunks and add to a buttered mug (I actually used a single portion pie-dish, which is a little larger than a ramekin).
  2. In another mug beat the egg with the milk and sugar.
  3. Add a splash of vanilla and a sprinkle of nutmeg.
  4. Whisk together and pour over the bread.
  5. If you have time, leave for a few minutes for the bread to absorb the egg mixture.
  6. Either way, put the mug into the microwave and cook in 30 second blasts until just done- mine took 2 minutes at 850W.
  7. Leave to cool.
  8. Serve with syrup.

Shady Maple Farms Organic Maple Syrup- deliciously sweet and with that gorgeous maple flavour- comes in a great pouch which is easy to use and much better than the bottles that get all drippy and sticky. It also stays fresher for longer owing to the ]packaging, which doesn’t allow light to penetrate, helpful if you don’t use Maple Syrup that often.
