French Toast in a Mug

- Two English Muffin/mug-sized slices of bread
- butter for greasing
- 1 egg
- 2 Tbsp milk
- 1 tsp sugar
- Vanilla Essence
- Nutmeg
- Just tear up the bread into chunks and add to a buttered mug (I actually used a single portion pie-dish, which is a little larger than a ramekin).
- In another mug beat the egg with the milk and sugar.
- Add a splash of vanilla and a sprinkle of nutmeg.
- Whisk together and pour over the bread.
- If you have time, leave for a few minutes for the bread to absorb the egg mixture.
- Either way, put the mug into the microwave and cook in 30 second blasts until just done- mine took 2 minutes at 850W.
- Leave to cool.
- Serve with syrup.
