French Toast in a Mug

Ingredients
  • Two English Muffin/mug-sized slices of bread
  • butter for greasing
  • 1 egg
  • 2 Tbsp milk
  • 1 tsp sugar
  • Vanilla Essence
  • Nutmeg
Instructions
  1. Just tear up the bread into chunks and add to a buttered mug (I actually used a single portion pie-dish, which is a little larger than a ramekin).
  2. In another mug beat the egg with the milk and sugar.
  3. Add a splash of vanilla and a sprinkle of nutmeg.
  4. Whisk together and pour over the bread.
  5. If you have time, leave for a few minutes for the bread to absorb the egg mixture.
  6. Either way, put the mug into the microwave and cook in 30 second blasts until just done- mine took 2 minutes at 850W.
  7. Leave to cool.
  8. Serve with syrup.
