I recently had the good fortune to attend a Chinese Cooking Masterclass given by Hannah Hayes from China Feast to celebrate the launch of Amoy Premium Soy Sauce. I love the simplicity of these Fried Egg Biscuits but they do look very striking on the plate. I initially made them as an Easter treat but the more I look at them, the more I think they'd make a great April Fool's. This really is an easy recipe. Colcannon is a traditional Irish Dish made from potatoes and cabbage. There's more to it than that obviously but these are the two prime ingredients.
