Less than a month until Pancake Day on March 4th so I thought I’d share our current favourite filling: Banana Chocolate filled Crepes.
You need a sliced banana– do please use fairtrade bananas if you can- and a packet of chocolate buttons. You can make these as you go along, or else, make a stack of fresh pancakes– the crepe-style one rather than the American-style one- then pop them back into a warm frying pan for a minute or so.
Once you have flipped (or rewarmed) the pancake, add some slices of banana and some of the chocolate buttons to cover just one quarter of the pancake.
Using the end of your pancake flipper to help, fold the pancake in half, over the banana pile, then in half again- forming quarters- to totally pile on top of the quarter with the chocolate.
Press gently down: the pressure of the folded pancake and your pancake turner should help the heat melt the chocolate.
Leave for about a minute then turn onto a plate.
Serve with all manner of things, but I do recommend Chocolate Sauce, or Salted Caramel Sauce, with your Crepe.
