Apple Rosti pancakes

I don’t know whether you have this issue but my children ask for an apple, promise to eat the whole thing and then hand me half of it back ten minutes later saying that they are full. There aren’t that many uses for a half-eaten apple but I think I’ve found one that works well.

A few store-cupboard ingredients and you can have a delicious breakfast or post-school treat.

Apple Rosti pancakes

Recipe type: kids
Prep time:  5 mins
Cook time:  15 mins
Total time:  20 mins
 
This makes 6-8 pancakes, depending on size.
Ingredients
  • 2 apples- or parts of- peeled, cored and grated.
  • 1 Tbsp plain flour
  • 1 egg, beaten
  • 1 tsp mixed spice
Instructions
  1. Mix all the ingredients in a bowl- it helps to mix dry first and then add egg.
  2. Heat a frying pan over a medium heat.
  3. Melt a little butter, then add dollops of mix onto the hot pan. Press down with the back of a spoon to form a rough circle.
  4. Fry for a couple of minutes until the under side is browning and crispy. Flip and fry for a further minute- 90 seconds.
  5. Keep warm on a plate in the oven until you have used all the mix up.

Delicious for breakfast, or with cream or ice-cream. For a delicious grown-up treat, try Calvados Cream!

    Kartoffelpuffer! I love them! In Germany, no one would have them with cream or ice-cream though. You either have them with some sugar on top or apple sauce – amazing!

    Halleluiah! Yes, we have *exactly* the same problem here. (And they won’t take the apple cut into slices either.) I don’t wish to deny my children healthy apples but the wasteage is terrible. They love pancakes though so I’ll be giving this a go!

    My kids do that all the time. I keep meaning to cut them in half to serve but whenever I do they insist they really are going to eat it all this time. *sigh*

    they sound great!
    some of the apples these days are so big that even I’m full before I’ve finished it – I would much prefer to eat these though!
