It’s apple season. I know this because there are adverts for the Brogdale Apple Festival across the Kent countryside. If you haven’t been, do go. It really is an experience.
But apple season means cooler weather, which requires a sweater and warming food. Comfort food.
Like baked apples with a crumble-style filling.
No, they are not high fashion but golly they are delicious. And so easy that your children can make them.
All you need are:
4 apples
4 tablespoons soft butter
2 tablespoons plain flour
2 tablespoons rolled oats
2 tablespoons demerara sugar
2 tablespoons raisins or sultanas
4 tablespoons apple juice
Core your apples and sit in an oven-proof dish. I also score the skin all the way around the middle to allow for expansion in the oven.
In a bowl, rub together the sugar, flour and butter. Once blended, stir through oats and raisins.
Pack the cored apples with crumble mix, stacking up as high as you dare.
Drizzle each pile of crumble with a tablespoon of apple juice.
Bake in a warm oven (160C) for about 45 minutes. If they look like they are catching, cover loosely with foil.
Serve with a good scoop of vanilla ice-cream.
