Once I made Custard in the Vitamix, I found a recipe for Vitamix lemon curd and had a try. It turned out to be disappointingly runny. Undeterred, I used a tub of double cream to make a St Clement’s Syllabub.
St Clement’s, from recollection, is a drink made of orange juice mixed with bitter lemon. I recall that one of my aunts used to drink it when she visited us in Cyprus when I was a child. I thought she was desperately elegant and a little exotic as a result.
To make the syllabub, I used a handmixer to beat the double cream until it was thick and stiff. Then I added about half a jar of lemon curd- around 1/2 cup- and beat it again. Finally I used 1/2 cup of orange liqueur- in this case one I made for Christmas, but you could use Cointreau- and beat a third time.
You could also add lemon and orange zest and fold it through if you wish.
When you are happy, divide the syllabub between serving bowls and refridgerate until you serve.
