Last year as part of Around the World in 12 Dishes, we visited Sweden, made a delicious cake and some floral crowns. Given the proximity of Sweden and this month’s country- Finland- and the similarities in traditional foods and crafts, I could just have pointed you to those this month.
But instead, I got in touch with a former employer and Finn, and bring you the Finnish Sandwich Cake. Apparently this is a traditional dish that is ‘a staple, wheeled out every time a cold buffet is needed – christenings, graduation parties, confirmation and so on.’ And it is exactly as you would imagine: a sandwich that looks like a cake, slices of bread, between which you put all manner of savoury fillings. Mayonnaise and sour cream feature heavily so that it’s not dry. Prawns and smoked salmon is ace. Decorate with dill, slices of lemon, cucumber.’ So that’s what the girls and I did: we made a sandwich and decorated it to look like a cake.
Obviously these are cupcakes rather than a full-on Finland-style Sandwich Cake, but they worked. And they were delicious.
