Eric and Ernie Golden Syrup Cake #cbias

Have you noticed a big yellow hot thing in the sky lately? I’m told it’s the ‘sun’. I have discovered an allergy to this ‘sun’ which means I have been sneezing and sniffing all weekend long. To cheer my germ-ridden self up, and because #CBias asked me to take a trip to my local supermarket baking aisle- like I need an excuse-, I thought I would bake a cake. Shaped like this ‘sun’.

I popped to my local Waitrose to grab the ingredients, so check out my experience with my Google+ Golden Syrup Cake #CBias photo album, and then I hurried home to make cake whilst the sun shone.

bring me sunshine Golden Syrup Cake

To make a Golden Syrup cake, I adapted a Gateau au Yaourt recipe which requires a small pot of yogurt, both as an ingredient and as the measure: genius, n’est-ce pas?

small pot of natural yogurt

Ingredients:

1 small pot of natural yogurt

4 eggs

3 pots of self raising flour

2 pots of Golden Syrup Caster Sugar

1/2 pot vegetable oil, then fill to the top with Golden Syrup

Method:

Mix everything in a bowl then pour into a well-greased cake tin and bake at 160 C for about 40 minutes, or until a skewer comes out clean.

Leave to cool for a few minutes in the tin, then poke full of holes.

Meanwhile, warm half a pot- that’s the yogurt pot not the syrup pot-  of Golden Syrup in a pan, before pouring over the top of the cake and leaving to soak.

This cake is best served slightly warm.

Oh, yum, that looks good. My last day at Orchard Toys on Thursday I baked four cakes. Which was, of course, far too much as I bought to bakery swiss rolls and Ali who’s taken over from me, backed a super carrot cake. Result: I have a freezer full of sliced cake! What joy! 🙂

The tin is a silicone affair from Habitat at Homebase Slummy Single Mummy. I am loving it.
