Around the World in 12 Dishes: Australia

Pavlova, Anzac biscuits, Lamingtons, BBQ shrimp : these are the foods I associate with Oz, based primarily on my former love of the hit soap opera Home and Away. I thought about making one of these for the latest leg of the 12 Dishes tour, but we’re away from home, in someone else’s home, so I thought  should keep it simple.

And Damper bread really is simple to make. Originally made with flour and water, this bread was made by the Jackaroos on the campfire. Flour and water also makes glue. Just saying. I adapted a more recent recipe and got to work with Dimples. This is a brilliant recipe to make with small children because they really can do everything themselves.

how to make damper bread

Ingredients:

1 and half cup wholewheat flour

pinch salt

40g butter

50ml water

1/3 cup sour cream

1/3 cup sliced strawberries

1/2 tsp vanilla essence

 

Method:

Rub butter into salted flour, then add water, sour cream and vanilla and bind.

Finally stir through strawberries. They will get squashed so don’t worry to much about it!

Turn out onto a floured surface and knead gently until smooth.

Shape into a round, score top, and place on a greased baking tray at 200C for 30 minutes or until bread is cooked through and sounds hollow.
