Another recipe from my Coffee Morning a couple of weeks ago, I think these brownies are a super caffeine-tinged chocolate pick-me-up, and they went down a treat.
- 350g caster sugar
- 225g butter, melted
- 70g cocoa powder
- 1 tbsp Camp Coffee (or 3tsp of instant mixed with 1 tbsp of hot water until dissolved.)
- 4 eggs
- 225g plain flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Mix all the ingredients together in a bowl, then pour into a greased rectangular baking tray (25cm x 35cm)
Bake at 180C for 25 minutes until crisp on top.
Leave to cool then, using a circular cutter, cut as many rounds as you can from your brownie. (The trimmings make excellent treats for small children.)
To the centre of each circle, add a spoonful of coffee icing , and decorate with a coffee bean (I didn’t in the photographs because I ran out of time: I just dusted them with icing sugar and cocoa.)
