I spent a couple of hours with a big blob of sugar paste last week so that I can bring you these biscuits.
So, first you will need a batch of your favourite biscuits. I tried an all butter recipe, but I wasn’t all that impressed and tend to favour the biscuit recipe in The Biscuiteers book. Who wouldn’t? Anyhow, make your biscuits and cut out circles, then bake and leave to cool.
Once cool, then pipe a line of white royal icing around the edge of the biscuit and leave to dry for a couple of minutes. Using a slightly wetter royal icing, ‘flood’ the circle (the idea is that, by virtue of being wetter, the icing will spread by itself to cover the biscuit, all the while being kept in place by the barrier you piped earlier.)
Leave for a few minutes to firm up a bit, then place a Breastcancer Ribbon (see below) in the centre of your white circle. Leave to dry overnight.
Enjoy with a cup of tea.
To Make the BreastCancer Ribbons (Make the Night Before you plan on making the biscuits)
You will need some pink sugarpaste (or fondant) ready-to-roll icing, which you can buy online or from your local cakecraft shop. How much you use depends on how many biscuits you make. Should you happen to have it, you can add food colouring to your spare white fondant icing. Mine is a bit more red than I would have liked: I blended white and red fondant together in slightly the wrong proportions.
1. Soften the fondant by rolling it in your hands.
2. Pinch off a blob of fondant, about the size of a fingernail and roll it into a sausage that is about the length of your middle finger.
From here, there are two ways you can go:
a) Squash the worm flat into a ribbon, then loop the ribbon over itself, securing in the centre with a dot of icing between the two layers of ribbon.
b) Loop the worm over itself and secure at the crossover point with icing. Flatten out. Decorate with icing dots.
3. Leave to dry overnight on a greaseproof surface. Peel off and secure on your iced biscuits.
