Crispy Crunchy Chewy Gooey Easy Peasy Rice Krispie Snowballs

These babies went down so well at Pumpkinfest 2011 that I thought I’d use the same idea for a child-centric home-made Christmas gift: an ideal alternative to the hands-off-they-are-mine-Christmas-Pudding-Truffles that I shall soon be making. There are a lot of children in LBG’s class so we’ll need to start early. These snowballs are really just a reworked version of that party favourite, the rice crispie cake, for which you need:

Rice Krispie Pumpkins

3 Mars Bars (US equivalent is, according to Google, the Milky Way. Don’t try it with our Milky Ways, fellow Britons.)

3oz/75g butter

3oz/75g Rice Krispies (or equivalent)

Melt the Mars Bars and the butter (don’t be tempted to use margarine), either in the pan or microwave. The resulting goo will undoubtedly look deeply umpleasant, but bear with me.

Beat melted repulsiveness together until you have a cohesive chocolatey liquid. Do not be tempted to ‘taste’ it or you will burn your tongue.

Pour over the Rice Krispies, and mix well until delightfully chocolatey. This is the point at which you can safely ‘test’ the mixture.

Leave to cool for a bit so that you can comfortably handle the mixture, then take walnut-sized handfuls and press into balls. This will work, honestly. You might have to fiddle a bit until you find the right ‘knack’.

Rice Krispie balls made with Mars Bar

Leave your balls to cool whilst you melt about 300g chocolate (frankly, I just kept melting more Wiltons Candy Melts as I needed them so have no real idea how much I used. Plus it depends how thick a coating you want etc.)

Dip them in white chocolate

Dip the cooled Krispie balls [insert puerile snigger here] in the chocolate until completely coated, then leave to dry. You can put them on baking parchment if you plan on packaging these babies in cellophane bags, or do as I did and put them in petit four baking cases.

Rice Krispie Snowballs

Try your very best not to eat them all before Christmas. They are scrumptious, and I am fairly sure that they are NOT calorie-free.

Wow these look amazing – my daughter would love them! I don’t ‘do’ white chocolate though, so I might have to do mud balls for myself!

I made something similar to this recently with marshmallow rather than mars bars, I reckon they’re perfect for handing out to trick or treaters!
