I was at Lady W’s again on Thursday, so she could go kiteboarding/househunting. The great news is that the Jigsaw Fiend is really making eye contact and smiling and, more importantly, has cracked the potty training. He is an absolute joy to be around. Whilst he was being tutored and Smiley Crawler was taking a brief (a very precise 45 minutes- he doesn’t like to miss anything!) nap, I took the opportunity to use up some of the gluten-free flour in the cupboard. They won’t be needing it anymore as JF is no longer gluten-free. I used this recipe and tossed a ripe banana in for good measure.
Ingredients
75g (3 oz) butter, softened
50g (2 oz) peanut butter (either, but crunchy is better)
50g (2 oz) caster sugar
50g (2 oz) demerara sugar
125g (5oz) plain flour
1 banana, mashed
Pinch of salt
1) Blend butter with peanut butter and then stir in the sugars . Bung in the banana and give a good beating!
2) Stir in the flour to make a dough.
3) Shape teaspoon-sized amounts of the mixture, which is very soft, into balls. Space them out onto greased baking trays and flatten each with a fork (making a criss-cross pattern on the top).
4) Bake each tray for about 15 minutes at 200ºC until pale brown.
5) Leave to cool slightly before very carefully transferring them to a cooling rack.
