Potatoes a la Rustique


DH doesn’t cook that much these days, now that he has a full-time wife. But every so often when the will takes him, he forcibly evicts me from the kitchen, makes all kinds of mess and produces something wonderful, as with Potatoes a la Rustique.

Ingredients:

As many potatoes as you need, cleaned.
Handful fresh rosemary
Handful garlic cloves
Olive oil and a little butter

Method:
Put a good glob of olive oil into ovenproof dish. Pop in the oven at 180C whilst you deal with potatoes.
Chop potatoes, skins and all, into bite-sized chunks.
Bash garlic cloves with flat edge of knife, rather like Jamie Oliver does. Remove skin.
Get dish out of oven, add potatoes, garlic and rosemary and toss to cover ingredients in oil. Top with knob of butter and bake for forty minutes or so until golden.
Serve with Waitrose Rotisserie chicken, or whatever you fancy. Enjoy al fresco where possible.

    Okay, you see, this is fate! I’m doing Lemon and Tarrogan chickent tonight and was in a quandry over whether or not to have rice or a plain old jacket with it. Now, problem solved!!!!! Thank you x
