I know that I said Christmas doesn’t start until my birthday is over. And it doesn’t, but my birthday is tomorrow, and by nightfall I will have ordered our tree, dug out decorations, be playing the festive CDs and baking. These, I think:
Christmassy Mincemeat Slice
5oz butter
3oz soft brown sugar
6oz plain flour (or wholewheat if you prefer)
2oz ground almonds
1 tsp almond essence
4oz porridge oats
8oz mincemeat
11×7 shallow baking tin
Melt the butter in a saucepan with brown sugar.
Mix flour, almonds and porridge oats in a large bowl.
When butter and sugar have turned liquid, remove pan from heat and begin adding the flour and oats, stirring well. Add essence.
Spoon half the mixture into the prepared tin. Press the mixture into the tin firmly using the flat of your hand.
Next spread the mincemeat evenly all over the bottom layer.
Finish with a final layer of oat mixture. Top with flaked almonds, if you have them….
Bake in the centre of the oven for about 20 mins at gas mark 6, 200 C.
When the top is golden brown remove it from the oven and cut it into squares (leave them in the tin until they are cold to make it easier to remove them).
